Colin was excited to return of the Taste Port Douglas Festival again in 2025, hosted from 6-9 August at the Sheraton Grand Mirage.

Hosted across four days, Taste Port Douglas is Australia’s leading tropical food and drink celebration — a boutique, sensory-rich festival where world-class flavours meet sun-warmed beaches and unforgettable hospitality.

It’s an incredible festival filled with curated events, celebrated chefs and passionate producers gather to share extraordinary meals, masterclasses, and experiences that capture the magic of Far North Queensland – and this year was no exception.

Colin was back again as part of the event’s Takeover Series, cooking up a storm at the Legacy Lunch: Defining Dishes with good friends Manu Feildel and Darren Purchese.

In this exclusive dining experience, each chef shared a signature course, offering a rare glimpse into the stories, inspirations, and techniques behind the plates that have defined their unique culinary styles.

Colin also played the part of MC at the Brit Pack 2.0 chef’s dinner hosted on Friday night of the festival, a once-in-a-lifetime dining experience celebrating the culinary mastery of an elite lineup of culinary heavyweights: Ryan Clift, Nelly Robinson, Roger Pizey, and Raymond Capaldi.

It was another hugely successful instalment of the festival, and Colin can’t wait to be back next year!
