The recently renovated bistro at the Banksia Hotel is ready to get on with the business of pushing out plates of honest, well-cooked fare. Honesty is one trait for which the Banksia’s Executive Chef, Colin Fassnidge, is well known. Through the Banksia Fassnidge, of 4Fourteen fame, is returning to his pub pedigree and looking to have his brand of hearty, seasonally-driven food define the Banksia Hotel’s recent reinvigoration.
Pub bistros are familiar ground for Fassnidge, who established his reputation as one of Sydney’s leading chefs at the Four in Hand in Paddington, before opening 4Fourteen. “Pubs are where I really got my name, and I love the honesty that pub patrons demand,” says Fassnidge.
